In this workshop, we will explore arepas—a traditional dish from Venezuela and Colombia with roots dating back to pre-Columbian times. These simple, round flatbreads made from corn flour are naturally gluten-free and incredibly versatile. In Venezuela, they are eaten almost daily, with more than 70 variations—from grilled and baked to fried, filled, or even sweet.

Together, we will prepare the dough, shape it, and cook it, then move on to creating a variety of fillings. Along the way, we will experiment with unexpected combinations using local ingredients and develop our own interpretations of this beloved dish. Arepas offer a perfect base for creativity, as they can be filled with almost anything—from traditional pairings to entirely new ideas.

In a relaxed and welcoming atmosphere, we will also explore the cultural background of the dish while cooking. At the end, we will bring everything together into a shared meal, accompanied by music and culinary touches from Venezuela and Colombia.

Through hands-on practice, participants will learn the essential techniques of making arepas—from kneading and shaping the dough to cooking and balancing flavors—and gain inspiration for incorporating them into their everyday cooking.

The workshop will be held in English, with the possibility to communicate in Slovenian or Spanish.

About the mentor

The workshop will be led by Valeria Citterer, an architect and visual artist with experience in the culinary field. She works at the intersection of cooking and organizing food-related events and workshops, connecting food with themes of migration and cultural identity.
